Gluten is a composite protein found in cereal grains such as wheat, barley, and rye. Adverse immune responses to ingested gluten are relatively common and can cause debilitating symptoms. Since there is no cure, affected individuals must adopt a strictly gluten-free diet. Accordingly, numerous countries require that “gluten-free” food labels meet certain criteria. To assist the food industry in establishing effective food safety practices, Microbiologique has developed the OnSite® Gluten Test Kit to detect gluten in select food products and on surfaces without the use of lab equipment or complex extraction procedures.
This test kit is designed to detect gluten from wheat, barley, and rye in a variety of baked and raw foods (solids, powders, and liquids) and on environmental surfaces.
OnSite®Gluten has a detection limit of 11 µg/100 cm2 gluten on surfaces. The LOD can be variably adjusted to 5, 10, or 20 mg/kt (ppm) gluten in food products, depending on the matrix and the user’s individual needs.
The assay is intended for laboratory and industry use, including within food production facilities, commercial kitchens, contract laboratories, and auditing programs. Testing should only be performed by trained personnel.
The OnSite® Gluten Test Kit is certified as an AOAC Performance Tested Methods℠ (Certificate No. 012501) validated method. This recognition underscores the kit’s reliability and accuracy in the qualitative detection of wheat, barley, and rye gluten in select food matrices and on stainless steel surfaces.
The OnSite® Gluten Test Kit was rigorously evaluated for its ability to detect gluten in diverse samples, including:
Additionally, the OnSite® Gluten test kit has been extensively validated by IEH’s ISO17025-accredited laboratory. Contact us for detailed validation data or matrix-specific concerns.
The OnSite® Gluten test is a lateral flow assay that rapidly detects gluten derived from wheat, barley, and rye in select foods as well as on environmental surfaces. The kit is based on the monoclonal antibody 2D4 configured in sandwich format. 2D4 replicates the characteristics of the R5 antibody while additionally detecting deaminated gluten as well**.
To operate the kit, the sample is briefly extracted, diluted in a running buffer, and then directly applied to the device. The fluid is then wicked across the reagent zone, which includes a procedural control line (C) and a test line (T). The test outcome is interpreted by visualizing the appearance of these lines at 10 min.
