Allergy to shellfish is extremely common, affecting 0.1% of children and 2% of adults in the USA. Tropomyosin is a major muscle protein found in crustaceans and has been identified as the major allergen shellfish including shrimp, lobster, crawfish, and crab. Tropomyosin is a very potent allergen, thus very small quantities are capable of eliciting severe, life threatening allergic reactions in sensitized individuals.

Intended Use

The ELISA SYSTEMS® Crustacean Tropomyosin Residue Detection Kit is an enzyme-linked immunosorbent assay (ELISA) that may be used to screen food products for the presence of specific crustacean residues caused by cross-contamination with shrimp, lobster, crab, and crawfish. This assay is a rapid and reliable test that significantly reduces the time required to screen food products for the presence of crustacean.

Assay Principles

The ELISA SYSTEMS® Crustacean Tropomyosin Residue Detection Kit is based on the Sandwich Enzyme-Linked Immunosorbent Assay format. The food sample is first subjected to an extraction procedure and then tested by ELISA for the presence of the primary crustacean allergen, tropomyosin. The results may be quantified by comparing the test results against results obtained from protein standards supplied in the kit.
