Peanut allergy is one of the most common food allergies, affecting roughly 2.1% of children and 1.3% of adults. Peanut allergens are very potent and can cause severe, potentially fatal allergic reactions. For these reasons, individuals with allergy to peanut must practice strict avoidance. Unexpected sources of peanut include chili, egg rolls, pancakes, glazes, pet food, pesto, salad dressings, vegetarian meat alternatives, and sweets. The protein Ara h2 has been one of the peanut proteins of much attention. This method is an enhanced and more sensitive assay designed to detect Ara h2.
The ELISA SYSTEMS® Peanut Residue Detection Kit is an enzyme-linked immunosorbent assay (ELISA) that may be used to screen food products for the presence of allergenic peanut residues introduced into foods via cross-contamination during manufacturing or direct contamination of raw ingredients. This assay is a rapid and reliable test that significantly reduces the time required to screen food products for the presence of peanut.
The ELISA SYSTEMS® Peanut Residue Detection Kit is based on the sandwich enzyme-linked immunosorbent assay format. The food sample is first subjected to an extraction procedure and then tested by ELISA for the presence of peanut allergens. The assay detects Ara h2 protein. The results may be quantified by comparing the test results against results obtained from protein standards supplied in the kit.
